Ingredients

  • 4-5 lbs pork ribs
  • 1 tsp powdered ginger
  • 2 tsp cumin
  • One tablespoon freshly ground black pepper
  • One tablespoon dry thyme
  • 2 tbsp garlic powder
  • 2 tbsp dry oregano
  • 1 ½ tsp kosher salt
  • 1 tsp ground chipotle powder
  • Two cups Maple Chipotle Barbecue Sauce. See Recipe below
  • 1 cup water
  • 1 tsp chipotle powder or to taste
  • 1/2 cup maple syrup
  • Two cloves minced garlic
  • pinch salt

Instructions

  1. Combine the ginger, cumin, black pepper, thyme, garlic powder, oregano, salt, and chipotle powder.
  2. Rub all over the surface of the ribs. (You can do this step the day before and let the ribs marinate in the spices overnight if you like to infuse the flavor into the meat.)
  3. Place ribs in a single layer in a large covered roasting pan or on a cookie sheet that you will cover completely with aluminum foil. Cook for about an hour and a half at 300 degrees.
  4. At this stage, cut the meat into individual ribs and place it in a covered roasting pan. To the pan, add all of the remaining ingredients.
  5. Cover and return to the oven for 1 1/2 to 2 hours or until they are very tender, with the meat falling off the bones.

Maple Chipotle Barbecue Sauce

Ingredients

  • 3 tbsp olive oil
  • Three cloves chopped garlic
  • One medium red onion chopped
  • 2 cups plain tomato sauce
  • ½ cup maple syrup
  • ¼ cup apple cider vinegar
  • ½ to 2 tsp ground chipotle powder according to taste; 2 tsp would be pretty hot
  • ½ tsp black pepper
  • ½ tsp ground dry thyme
  • 1 tsp salt

Instructions

  1. In a small saucepan, cook the onions and garlic in the olive oil slowly over medium-low heat until softened and beginning to caramelize.
  2. Add all of the other ingredients to the pot and bring to a slow simmer.
  3. Simmer for about 20-30 minutes or until reduced by about ¼ the initial volume, stirring often. When cool, puree in a blender or food processor until smooth. Makes about 2½ cups.
